Slice the sausages into rounds. Thinly slice the onion and roughly chop the cabbage.

Heat 1 teaspoon oil in a skillet. Add the sausages and onion, and sauté. When they start to soften, add the udon noodles and 3 1/2 tablespoons water (about 50 ml). Cover and steam briefly.

Gently loosen the noodles while stir-frying, then add the soy sauce and okonomi sauce. Mix well. Once combined, add the tempura bits and bonito flakes, toss quickly, and serve.
