Pork Shabu Udon with Sesame Dressing

Bring water to a boil in two pots: one for the udon and one for the pork.

Cut the pork into bite-sized pieces.

Add sake and ginger paste to the pot of water for the pork and stir.

Add the udon noodles to one pot and the pork to the other.

While they cook, mix the sesame dressing and noodle soup base to make the sauce. Add chili bean paste to taste and adjust the spiciness as you like.

Once the pork is cooked, transfer it to a strainer and drain well.

To make a boiled egg, refill the empty pork pot with fresh water (not listed in ingredients) and bring to a boil.

When the water boils, add the egg and boil for 7 minutes for a soft center.

When the udon is done, transfer it to a strainer and drain well.

Place the udon in a bowl, top with the pork, and sprinkle with green onion.

When the boiled egg is ready, cool it well in water, peel, and cut in half.

Add the halved egg to the bowl and pour the sauce from step 5 over everything.

Finish by sprinkling with green onion and sesame seeds, then drizzle with sesame oil.
