Simple Chikuzen-ni Style Stew with Few Ingredients

You can make a Chikuzen-ni style simmered dish with just chicken, daikon radish, carrot, and mushrooms. The seasoning is easy with mentsuyu (noodle soup base). Thank you to everyone—over 100 people have tried this recipe!
Recipe background:
I wanted to eat Chikuzen-ni but only had a few ingredients, so I made it with what I had. Of course, if you have lotus root, burdock root, taro, bamboo shoots, etc., feel free to add them. For mushrooms, using rehydrated dried shiitake and their soaking liquid will make it even tastier.

Ingredients

Serves about 4 servings
  1. 1 piece(about 10.5 oz / 300 g) boneless skin-on chicken thigh
  2. About 4 inches (about 10.5 oz / 300 g) daikon radish
  3. 1small (about 3.5 oz / 100 g) carrot
  4. About 3.5 oz (100 g) mushrooms (here, shimeji)
  5. 1 tablespoonsake (15 ml)
  6. 1 tablespoonmirin (15 ml)
  7. 2or more tablespoons mentsuyu (3x concentrate) (30 ml~)
  8. 1/2 teaspoonsalt (for seasoning chicken)
  9. About 3/4 cup water (200 ml~)
  10. 1 piecekombu (about 2 x 2 inches / 5 x 5 cm)
  11. Green beans or snow peas for garnish, if available
  12. Vegetable oil, as needed (for sautéing)

Steps

  1. 1

    Cut the chicken thigh into bite-sized pieces and sprinkle with 1/2 teaspoon salt.

    Cut the daikon and carrot into bite-sized pieces. Trim the base from the shimeji mushrooms and separate into small clusters.

    Heat a pot and add vegetable oil. Place the chicken skin-side down and sear until browned.

    Flip the chicken. When the color changes, add the vegetables and lightly sauté.

    Add the mushrooms, water, kombu, and all seasonings. Bring to a boil, then reduce to low heat and simmer for about 20 minutes.

    When the ingredients are tender, turn off the heat and let cool to allow the flavors to soak in. Reheat just before serving.
