Makes 3 pizzas
  1. For 3 pizza crusts
  2. 1 1/3 cupswater (310 grams)
  3. 1 1/2 tablespoonssugar (20 grams)
  4. 1 1/2 teaspoonssalt (8 grams)
  5. 1 1/2 tablespoonsnonfat dry milk (12 grams)
  6. 3 tablespoonsolive oil (40 grams)
  7. 2 1/2 cupsall-purpose flour (300 grams)
  8. 1 2/3 cupswhole wheat flour (200 grams)
  9. 2 teaspoonsactive dry yeast (6 grams)
  10. For 1 pizza topping - Teriyaki Chicken
  11. 1boneless, skinless chicken breast
  12. 2 tablespoonsmayonnaise
  13. 7 tablespoonssugar
  14. 5 tablespoonssoy sauce
  15. 3 tablespoonssake (or dry white wine)
  16. 3 tablespoonswater (50 ml)
  17. For 1 pizza sauce
  18. 3 tablespoonsteriyaki chicken cooking juices (50 ml)

Cooking Instructions

    For the pizza dough:
    Pour the water into the bread machine pan.

    Add the sugar, salt, nonfat dry milk, and olive oil in that order to the pan.

    Evenly add the all-purpose flour and whole wheat flour to cover the water.

    Add the active dry yeast, making sure it does not touch the water.

    Place the pan in the bread machine and select the pizza dough course. Start the machine.

    For the topping:
    Cut the chicken breast into small pieces and mix with mayonnaise.

    Combine the seasonings in a microwave-safe bowl and microwave for 1 minute.

    Add the chicken from step 6 to a heated skillet and cook until browned on the surface.

    Add the sauce from step 7 to the skillet, cover, and cook the chicken through. Transfer to a container and let cool.

    When the bread machine beeps, turn the dough out onto a floured surface. Divide into 3 portions, shape into balls, cover with a damp cloth, and let rest for 20 minutes.
