Our Most Popular Chicken Curry

The origin of this recipe: I wanted to create a simple and easy curry that kids who often visit our home could enjoy, along with adults. While I like curry with lots of ingredients, I wanted to make a delicious curry that seems like it took a lot of effort, even when it's very simple. Vermont Curry medium spice is our standard choice.

While I like curry with lots of ingredients, I wanted to make a delicious curry that seems like it took a lot of effort, even when it's very simple. Vermont Curry medium spice is our standard choice.

Cut the chicken thighs into bite-sized pieces. Add grated garlic and curry powder, and rub them in well to marinate.

Peel the onions and cut them in half. Slice them against the grain.

In a heavy pot, add 1 tablespoon of vegetable oil and heat over medium. Sauté the onions. (Adding a pinch of salt, not included in the ingredients, helps release moisture faster.)

It's tough to sauté until caramelized, so at least cook until the onions' moisture is completely gone.

Add the marinated chicken from step 1.

Sauté until the chicken changes color.

Add water and bring to a boil, then simmer for about 10 minutes. Skim off any foam that appears.

Turn off the heat, dissolve the curry roux, and once fully dissolved, return to low heat.

Simmer for about 5 to 10 minutes until thickened, and it's done!

The sweetness of the onions and the spicy chicken make it irresistibly delicious! The garlic adds a subtle aroma that works wonders.

Variation: Dilute with udon broth and add plenty of green onions to make curry udon. It gives a curry nanban-like flavor.
