Ingredients

Serves 4 servings
  • 10shishamo (smelt fish)
  • 1/2onion (thinly sliced)
  • 1green bell pepper (julienned)
  • 1/2carrot (julienned)
  • Salt and pepper, to taste
  • as neededPotato starch (katakuriko),
  • as neededVegetable oil,
  • [Nanban Marinade]
  • 4 tablespoonseach sugar, soy sauce, and vinegar (about 60 ml each)

Steps

  1. 1

    In a small saucepan, combine the Nanban Marinade ingredients and bring to a boil. Pour into a container and add the vegetables to soak.

  2. 2

    Season the shishamo with salt and pepper, then coat with potato starch. Heat oil in a frying pan and pan-fry the shishamo on both sides until golden and crispy.

  3. 3

    Marinate the cooked shishamo in the vegetable and marinade mixture. Chill well in the refrigerator before serving.
