Tempura is simply shrimp coated in batter and deep-fried, but with just a few key tips, you can make it turn out so much better!

Remove the vein from the shrimp. Trim the tip of the tail, then use a knife to scrape off any moisture or dirt. Make four diagonal slits on the underside of each shrimp.

Place the shrimp belly-side down on a cutting board. Press down from above until you hear a slight 'pop.' Pat the shrimp dry with a paper towel.

Lightly coat the shrimp with flour, then dip them in tempura batter. Fry in oil at 350°F (180°C) until done.

When removing the shrimp from the oil, let as much oil drain off as possible to keep them from getting soggy.
