Easy Soft-Cooked Omurice with Demi-Glace Sauce

I created this dish when I had leftover rice and wanted to make something with it.

Add the cooked rice and ketchup to a frying pan heated over high heat. Stir quickly with a wooden spatula to combine, making sure not to let it burn.

Place the beef stew roux in a small pot and add boiling water little by little, adjusting to taste, to make the sauce.

Spoon the rice onto a plate. Heat a little oil in a frying pan, pour in the beaten egg, and gently stir with chopsticks so it doesn't overcook.

When the egg starts to set, stop stirring. Once the bottom is set but the top is still soft, place the egg over the rice. It looks best if you place it to one side.

Pour the demi-glace sauce on the opposite side of the egg, as shown in the photo. Finish by sprinkling with parsley.
