Peel the zucchini and cut into quartered sticks before slicing. Place in a microwave-safe dish and coat with olive oil and minced garlic. Cover and heat on high for 6 minutes. Let stand for about 5 minutes.

Add the * ingredients into the zucchini from Step 1 and mix well. The zucchini will release some water, but that's tasty as well. You can eat it while hot or chill before enjoying.
