A delicious, thick, hearty soup for those colder nights. If you like a thinner soup just water it down by adding more stock. It freezes well so if you end up with too much to get through, freeze in portions for another day

Ingredients

8 servings
  1. 4 tbspolive oil
  2. 2onions, chopped
  3. 2carrots, chopped
  4. 2 clovegarlic, finely chopped
  5. 2pre-roasted chicken breasts, chopped
  6. 2courgette/zucchini, chopped
  7. 2large potato, peeled & chopped
  8. 2000 mlchicken stock, hot
  9. 300 gramsbasmati rice
  10. 8tomatoes, chopped
  11. 800 gramscanned cannellini beans, drained
  12. 15 gramsflat leaf parsley, chopped
  13. to tastesalt & pepper

Cooking Instructions

    Heat the oil in a large pan and fry off the onion and carrot for 5 minutes

    Add in the garlic, chicken and courgette and fry for a minute

  3. 3

    Add the potatoes and stock. Bring to the boil and let simmer 5 minutes

  4. 4

    Add the rice, tomatoes and beans. Bring back to the boil then simmer for 20 - 25 minutes until the rice is cooked

  5. 5

    Stir in the parsley and season to taste with salt and pepper
