I tried a sample of something similar at the supermarket and was amazed at how good it was! I tried to recreate it at home, and I'm pretty pleased with how this turned out!

Ingredients

2 servings
  1. 1Zucchini
  2. Seasonings
  3. 1heaped tablespoon Soy sauce
  4. 1 tbspSugar
  5. 1 tbspVinegar
  6. 1/2 tspLemon juice
  7. 1half Red chili pepper (finely chopped)

Cooking Instructions

    Peel several strips vertically down the zucchini, then slice into 7 mm slices. Coat in salt (not listed) and let sit for about 15 minutes.

    Squeeze out any water the zucchini may release. Coat with the combined seasonings and leave overnight.

    Done!
