Rinse the rice and place it in a rice cooker. Add all the ingredients marked with ○ (mirin, soy sauce, bonito soup stock granules). Add slightly less water than usual so the rice cooks a bit firmer, then cook as usual.

Once the rice is cooked, let it steam for about 10 minutes. Shape the rice into onigiri of your preferred size. After shaping all the onigiri, cover them with plastic wrap and let them cool.

Line a toaster oven tray with parchment paper and arrange the cooled onigiri on it. Toast them using the toaster oven function.

Once browned, flip the onigiri and toast the other side the same way.

Flip the onigiri again, brush the mixed sauce (mirin and soy sauce) on top, and toast again. Flip, brush the other side with sauce, and toast once more.

Repeat steps 3 to 5 until all the onigiri are grilled. Place them on a wire rack and let them cool completely.

Once fully cooled, wrap each onigiri individually in plastic wrap and freeze.

To eat, simply reheat in the microwave.
