Slice the scallions very thinly on a diagonal and soak them in water until crisp. Separate the mushrooms into bite-sized pieces.

Bring the broth to a boil in a pot. Add the mushrooms first, then let everyone swish the scallions and pork in the hot broth to cook.

Wrap plenty of scallions and mushrooms in the pork slices, and enjoy with your choice of salt (rock salt recommended), yuzu kosho, or kanzuri.

For a delicious finish, add frozen udon noodles to the remaining broth. Top with white sesame seeds or yuzu kosho if you like.
