Fluffy Pancakes with Firm Tofu and Pancake Mix

Fluffy Pancakes with Firm Tofu and Pancake Mix

Blend the tofu with a blender or whisk until creamy, then add the egg and mix again. You can also use a mixer for this step.

Add the pancake mix and stir to combine.

The pancakes will puff up to more than double in size as they cook, so pour a little less batter than usual into the skillet for each pancake. Cook as you normally would.

These pancakes are incredibly fluffy and springy!
