Ingredients

Serves 2–3 servings
  • 10.5–14 oz tofu (silken or firm) (300–400g)
  • 1 bag (7 oz)bean sprouts (200g)
  • 3.5 ozground meat (pork, chicken, or beef/pork mix) (100g)
  • About 1 teaspoon sesame oil (or vegetable oil if you don't have sesame oil)
  • Seasonings
  • 1 tablespoon(about 15g) grated ginger
  • 1 teaspoon (2.5 g)chicken bouillon powder
  • 1 teaspoon (3 g)sugar
  • 1 1/2 tablespoons(about 27g) miso paste
  • 2 teaspoons (12 g)soy sauce
  • 1 1/2 tablespoons (18 g)cornstarch
  • 2 tablespoons (2 fl oz)water (30ml)
  • For a spicy adult version
  • To taste chili bean paste (doubanjiang) or chili oil
  • For garnish
  • To taste chopped green onions

Steps

  1. 1

    Cut the tofu into 1/2-inch (about 1 cm) cubes.

  2. 2

    Roughly chop the bean sprouts to about the size of diced onions.

  3. 3

    Heat a frying pan over medium heat, add sesame oil, then add the ground meat and cook until it changes color.

  4. 4

    Add the tofu, bean sprouts, and 1 1/2 cups water (about 300ml, not included in ingredient list) to the pan. Bring to a boil and simmer for about 3 minutes.

  5. 5

    Turn off the heat, add the well-mixed seasonings, stir gently, then return to medium heat.

  6. 6

    Stir gently to thicken, being careful not to break up the tofu.

    Transfer to a plate and sprinkle with chopped green onions. For adults, add chili bean paste or chili oil to taste.

    Rii-on made this with napa cabbage. In winter, napa cabbage is a great option—it adds more umami than bean sprouts and looks delicious!
