Cook 3.5 oz (100g) soba noodles slightly under the package time (about 20% less) for a firmer texture. Rinse under cold running water to remove starch, then chill thoroughly in ice water.

Place the soba noodles in a bowl, then top with the julienned cucumber.

Add the bonito flakes and sliced shiso leaves on top.

Stir the natto until sticky, then add it to the bowl. Top with chopped green onions.

Add the tororo kombu, radish sprouts, and torn roasted seaweed. Sprinkle with toasted sesame seeds.
