You can use homemade, store-bought, or frozen pork cutlet.

First, cut and prepare all the ingredients.

Heat olive oil in a pot and sauté the ingredients.

Once sautéed, season lightly with salt and pepper, then add water and bonito dashi to make a total of 2 1/2 cups (600 ml). Heat until warm.

Add the four types of curry roux as listed in the recipe and simmer over low heat.

Once the curry roux has melted, turn off the heat and cool the pot in cold or ice water for about 10 minutes to help the flavors soak in quickly.

After cooling, reheat gently over low heat until ready.

Serve over rice and top with as much curry as you like.
