Healthy Chicken Teriyaki (Extra Sauce)

A comforting, classic chicken teriyaki. Cut into bite-sized pieces, it's also great for lunchboxes. With a little extra sauce, it's perfect served over rice bowls, too.
Recipe background:
This is a dish that brings comfort. After trying various combinations, I arrived at this version. By removing excess fat and skin and wiping off oil from the pan, you get a healthier result even with chicken thighs. There's a bit more sauce than usual. You can also cook the chicken as a whole piece for a heartier meal.

Ingredients

Serves 3–4 servings
  1. 2 pieces(about 1.1–1.3 lbs or 500–600 grams) boneless, skinless chicken thighs (or chicken breast)
  2. 2 tablespoons (30 ml)sake
  3. Salt and pepper, to taste
  4. as neededPotato starch (or cornstarch),
  5. as neededVegetable oil,
  6. 2 tablespoons (25 grams)sugar
  7. 3 tablespoons (45 ml)hot water
  8. 3 tablespoons (45 ml)mirin
  9. 2 1/2 tablespoons (37 ml)sake
  10. 3 1/2 tablespoons (52 ml)soy sauce

Steps

    Trim excess fat and skin from the chicken. If you have time, poke the chicken all over with a fork. Cut into bite-sized pieces. Rub in the sake, salt, and pepper. In a separate bowl, mix together the sugar, hot water, mirin, sake, and soy sauce for the sauce.

    Lightly coat the chicken pieces with potato starch or cornstarch. Heat a skillet over medium heat, add vegetable oil, and place the chicken skin-side down. Cook for about 3 minutes until golden brown, then flip.

    Reduce the heat to low, cover, and cook for about 5 minutes until cooked through. Once done, use a paper towel to thoroughly wipe away any excess oil from the pan.

    Add the prepared sauce to the pan and increase to medium heat. Toss the chicken to coat evenly with the sauce.

    *Do not over-reduce the sauce.*

    Once the sauce has coated the chicken, it's ready.
