  3. 1pork tail (about 14 oz)
  4. 7 ozpork cartilage
  5. 1/2 cupblack-eyed peas
  6. 1/4 cuppearl barley
  7. 1 sliceginger

Cooking Instructions

    Peel and cut the lotus root into pieces. Clean the pork tail and pork cartilage thoroughly, making sure to remove any hair from the pork tail. Soak the black-eyed peas and pearl barley in water for an hour.

    Blanch the pork tail and pork cartilage in boiling water to remove blood. Then, place them in a pot filled with water along with the lotus root, black-eyed peas, pearl barley, and ginger slice. Bring to a boil, skim off any impurities, cover with a lid, and simmer on low heat for 1.5 hours. Add salt to taste before serving.
