Lotus root peanut soup
Easy and delicious.
Steps

Cut away the ending parts of the lotus root. Rinse with water. Peel and cut into slices.

Rinse the shiitake mushrooms with water. Cut into slices.

Soak the raw peanuts in hot water for 5 minutes. Drain and leave aside.

Cut the ginger into slices.

Break up the garlic. Cut away the root part. Peeling not required.

Add lotus root, shiitake mushroom, peanut, ginger, garlic, white pepper powder and cooking wine to a pot of water about 1200-1500ml. Bring it to boiling point with high heat, then simmer for 1 hour with low-medium heat. Replenish with hot water if necessary.

Add salt to taste.

Ready to serve.
