Lotus Root Soup with Peanuts

Ingredients

  1. 1/2 cupraw peanuts (optional)
  2. chicken/pork ribs
  3. 1 handfuldried goji (optional)
  4. 10dried red dates
  5. dried cuttlefish (optional)
  6. 1long lotus root (sliced into thin)
  7. to tastesalt

Cooking Instructions

    In a small bowl, add peanuts and hot boiling water in. Soak them for 30 mins.

    Do the same for dried goji for 15 mins.

  3. 3

    Blanch the pork with hot water.

  4. 4

    Add water to the large pot and add all the ingredients on high heat.

  5. 5

    Once the water boiling, turn it to low heat and cook for an hour.

  6. 6

    Add salt to taste.

  7. 7

    Serve

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
