Ingredients

Serves 3 servings
  1. 3boneless pork loin chops
  2. Seasoning for pork
  3. 1heaping tablespoon salt koji (see recipe 7160481)
  4. 1heaping tablespoon honey
  5. Salt and pepper, to taste
  6. 1 tablespoonginger paste
  7. 1 tablespoonsake (Japanese rice wine)
  8. 1 tablespoongarlic soy sauce
  9. Mayonnaise, as needed for coating
  10. as neededPanko breadcrumbs,
  11. Curry Sauce
  12. Vegetables
  13. 1onion
  14. 1small carrot
  15. 1eggplant
  16. 1–2 green bell peppers
  17. 3.5 ozcurry roux (about 100 grams)
  18. 7 ozwater (about 200 grams)
  19. Seasonings
  20. 3 tablespoonsplain yogurt
  21. 1 tablespoonketchup
  22. 1 tablespoonokonomiyaki sauce (or substitute with Worcestershire sauce)
  23. 3 tablespoonshoney
  24. 3 bowlscooked rice
  25. as neededShredded cabbage,
  26. Toppings
  27. Soft-boiled eggs, poached eggs, or omelet, as desired
  28. Blanched greens (such as spinach or bok choy), as desired
  29. Fukujinzuke pickles, as desired

Steps

    Cut the pork loin into strips about 3/4 inch wide. Place in a plastic bag, add the seasoning ingredients, and massage well. Let marinate in the refrigerator for a while.

    To make the curry sauce, cut the vegetables into bite-sized pieces and place in a microwave-safe bowl. Microwave at 600W for 3 minutes, until slightly softened.

    Add the curry roux and water to the vegetables. Cover and microwave at 600W for 1 minute. Stir well to dissolve the roux.

    Add the seasonings to the mixture and stir well. Cover and microwave at 600W for 2 minutes. Stir again, then microwave uncovered for another 2 minutes.

    Mix well and microwave a bit longer if needed until the sauce thickens slightly. The curry sauce is ready!

    To make the pork cutlet, add mayonnaise to the marinated pork and massage to coat. Dredge with panko breadcrumbs.

    Lightly oil the oven’s broiler pan and arrange the breaded pork on it. Broil for about 17 minutes, or until cooked through and golden brown.

    Scoop rice into bowls. Top with shredded cabbage, then spoon on the curry sauce. Place the pork cutlet on top to finish.

    Add your choice of toppings, such as eggs or blanched greens. Top with fukujinzuke pickles if you like!
