Ingredients

  1. 2 lbGround Beef
  2. 1Onion Chopped
  3. 1Zucchini Shredded
  4. 2 CCorn
  5. 1 CanBlack beans (drained)
  6. 1 CanRotel
  7. 1 PackageTaco seasoning
  8. Salt
  9. 4 CCooked rice
  10. Handfulsshredded cheese
  11. 29x13 pans

Steps

  1. 1

    Brown beef. Add in Onion and zucchini and cook until soft.

  2. 2

    Stir in taco seasoning.

  3. 3

    Add corn, tomatoes and beans.

  4. 4

    Spray 2 pans, spoon 2 C rice into the bottom of each pan. Spoon the meat mixture over the rice. Top with shredded cheese.

  5. 5

    If you want to eat right away: bake covered at 350 for 25 min.

  6. 6

    If freeze: let thaw overnight in fridge. Bake at 350 for 45 min covered. Then remove foil and cook until top is nice and brown.
