Ingredients

  • 2Blackbeauty Egg Plants sliced 1/2" thick
  • 1/4 cupolive oil
  • 1Medium sliced onion
  • 2sliced green chillies
  • 10 clovesgarlic smashed
  • 1Medium Tomato
  • 2Table spoon Tikka Masala
  • 1Fresh Scallion

Steps

  1. 1

    Heat oil in a Pan. Add Garlic. Cook 1 minute. Add Onion, cook 3 minutes covered. Add Green Chillies and Eggplant. Mix it gently. Add Tikka Masala and Tomato sliced. Mix again and cook on low heat. About 20 mts. Add chopped Scallion and serve hot.
