  • For the broth
  • 1 2/3 cupswater (400 ml)
  • 1 tablespoonmirin
  • 2 tablespoonssoy sauce
  • 1 1/2 teaspoonsbonito dashi granules
  • 1/2 teaspoonkombu dashi granules
  • 1/2 teaspoonsugar
  • Pinchsalt
  • For the kitsune (fried tofu)
  • 1 pieceaburaage (fried tofu pouch)
  • Seasoning
  • 1/2 cupwater (100 ml)
  • 1 tablespoonmirin
  • 1 tablespoonsake
  • 2 tablespoonssoy sauce
  • 1/2 teaspoonbonito dashi granules
  • 2 tablespoonssugar
  • Pinchsalt
  • Toppings
  • 1 slicenarutomaki (fish cake)
  • as neededChopped green onions,

Steps

  1. 1

    Boil the aburaage (fried tofu pouch) in water to remove excess oil.

    Rinse the aburaage with hot water using a strainer.

    Combine the broth ingredients in a pot and simmer.

    Let the aburaage cool to finish the kitsune topping.

    Heat the broth mixture.

    Cook the noodles according to package instructions.
