Since I usually add udon noodles at the end of sukiyaki, I decided to use leftover sukiyaki sauce to make yaki udon.

Since I usually add udon noodles at the end of sukiyaki, I decided to use leftover sukiyaki sauce to make yaki udon.

Slice the green onion on a diagonal and separate the shimeji mushrooms into small clusters.

Heat the sesame oil in a frying pan, add the pork, and stir-fry until cooked through. Add the green onion and continue to stir-fry.

Add the cooked udon noodles and sukiyaki sauce. Stir-fry everything together until well mixed.

When the sukiyaki sauce has mostly evaporated, taste and add more sukiyaki sauce if needed. Adjust the flavor with soy sauce, then serve.
