One casserole dish, one bowl, how easy.
This also offers many options to customize to your taste. I found my 2 quart dish a little small, usable, but on the small side. The original recipe just had the chicken breast laid in, I chopped mine up into 1-2 inch chunks.
The only downside to this dish, is it cooks for 2 hours.

Ingredients

4-6 servings
  1. 3chicken breasts, boneless, skinless
  2. 1 cupuncooked rice. Not instant
  3. 1medium onion
  4. 8 oz.mushrooms
  5. 1 bunchspinach
  6. 1 cancream of mushroom soup
  7. 1 envelopeonion soup mix
  8. 2 cupswater
  9. 1black pepper to taste
  10. 1salt to taste
  11. 1hot sauce to taste (optional)

Cooking Instructions

    Preheat oven 320-325 F

    Add uncooked rice to dish.

    Add chicken on to of rice (whole or cut up)

    Chop onion (i did half rings), add on top.

    Chop mushrooms, add on to

    Clean your spinach bunch

  7. 7

    Chop your spinach, add it on top.

    In a bowl, put your soups.

    Add water, pepper, salt and hot sauce if using, mix well.

    Pour in with the rest. Make sure it soaks down to the rice in all areas, or you could have some "crunchy" sections. Cover, cook 2 hours.

    Remove from oven, uncover, let sit 10-15 minutes before serving.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
