An instant pickle called Tukku in Tamilnadu.
I learnt from South Indian friend.
Steps

First grate raw mango using a big holed grater. In a kadhai take oil and add rai. When it splitters add hing. Add in grated raw mango.

Mix to coat the oil well, all-over. Cook for 3-4 minutes on slow gas. Stir in between. Switch off gas. Cool completely.

Mix in the 1/4 cup achhaar masala.
(For pickle seasonachhar masala: mix 4 cups rai kuriya, 1 cup roasted and cooled salt, 2cups Kashmiri chilli powder, 1 cup reshampatti chilli powder, 2 tsp fresh hing and 1/2 cup fully heated and cooled mustard oil.) - 4
Mix well and enjoy after 1 day. Store in an airtight glass container.Note to keep this pickle in fridge.
Enjoy with any rice dish, puri, roti, paratha.
