    Prepare ingredients.

    Blanch all the chopped auxiliary ingredients like duck gizzards, rehydrated scallops, dried shrimp, bamboo shoots, peanuts, pork tripe, shiitake mushrooms, and ham in boiling water, then drain.

    Pour the cooked glutinous rice into a container, add cooked pork fat, fine salt, MSG, pepper powder, and Shaoxing wine, and mix well.

    Combine the seasoned rice with the blanched auxiliary ingredients evenly and transfer into a large container.

    Place the chopped fresh mud crab on top of the prepared rice.

    Place the container with the rice and mud crab into a steamer and steam for 10 minutes.

    Once steamed, remove and pour Shaoxing wine over the dish to finish.
