Sanitize fermenter, fill with fresh juice, sprinkle yeast on top, close lid with airlock, ferment 45 days in dark closet or pantry, or shorter till bubbling has stopped.

When bubbling stops, dissolve meta bisulfite in solution to kill any remaining wild bacteria and maintain color.

Do the taste test. Measure one cup of wine. Taste. If you like sweeter wine, boil 1/2 cup sugar in cup of water, cool, you now made simple syrup. Add one teaspoon simple syrup to the cup, stir, taste, add another one if preferred. Add three times as many teaspoons of simple syrup per standard size wine bottle.

Use corks and corker, do not reuse wine bottles with metal screwcaps. Siphon clear wine on top directly into bottles. Siphon cloudy bottom wine throught funnel with paper towel. Age till Christmas. Good for a few years. Enjoy.
