Roast Lamb with Potatoes
A classic Greek dish full of flavor and aroma.

In a bowl, combine the olive oil, lemon juice, oregano, salt, and pepper. Mix well.

Peel, wash, and cut the potatoes into wedges. Add them to the bowl with the liquid mixture and toss well. Reserve a little of the mixture for the meat.

Transfer the potatoes to a baking pan and add the thyme sprigs.

For the onion mixture: Finely chop the green onions, place them in a small bowl, add salt and a little olive oil, and mix.

Place the lamb on top of the potatoes. Using a small knife, make holes in the meat and use your finger to fill each hole with a little of the onion mixture.

Pour the reserved mixture over the lamb and potatoes so everything is coated. Sprinkle with a little thyme, add the water, and cover with aluminum foil.

Bake in a preheated oven at 400°F (200°C) for 1 hour. Uncover, reduce the temperature to 350°F (180°C), and continue baking for about 30 minutes until golden brown.
