Boil the potatoes until fully cooked, then let them cool.

Mash the potatoes well, then add the chopped onion, chopped parsley, salt, black pepper, and citric acid (or lemon juice).

Mix well by hand. Taste and adjust the salt if needed. *I like to add extra citric acid for a slightly tangy flavor—it’s really delicious.*

Shape the mixture into medium-sized balls. Coat each ball in flour, then dip in beaten eggs, and finally roll in breadcrumbs.

Fry in a skillet filled with vegetable oil until golden brown. Serve with tamarind sauce or tahini sauce. Enjoy! 🌸
