Wash the shrimp, remove the shells, and devein if desired.

Cook the shrimp in a pot with water and salt (use just enough water to cook the shrimp). Once it comes to a boil, let it cook for 8 minutes, then turn off the heat and save the cooking water. Let both the shrimp and the cooking water cool completely. (You can do this a day ahead.)

Chop the tomatoes, onion, and the washed and disinfected cilantro.

In a large bowl, combine the shrimp, vegetables, a splash of orange soda, beer, and some of the reserved shrimp cooking water. Add the ketchup and salt to taste.

Slice the Perón chile pepper and add it if you like it spicy.
