Ingredients

15-20 min
4 servings
  • 1 kgfresh rice noodles
  • 250 gthinly sliced chicken thigh/brest
  • 100 gsquid rings
  • 50-100 gpealed prawns
  • 2 Tbssambal olek (Asian chilli paste)
  • 3 Tbslight soy sauce
  • 3-4 clovesgarlic (chopped)
  • 2spring onion(finely sliced white seperated from green)
  • 50 gbean sprouts
  • 1/2a lemon
  • 1-2 tspsesame oil
  • 2 TbsChinese cooking wine
  • 2eggs beaten till frothy
  • salt n pepper for eggs
  • 2 Tbsolive oil
  • 3-4champignons sliced

Steps

  1. 1

    Heat oil in wok or deep saucepan add garlic, white part of spring onion and fry for 2 minutes.

  2. 2

    Add sambal olek fry for 2 minutes.

  3. 3

    Add chicken fry till just cooked

  4. 4

    Move chicken mix to 1 side of pan away from heat, add beaten eggs and scramble and season with salt and pepper till cooked then combine altogether with chicken mix.

  5. 5

    Add sliced mushrooms, stir fry for 1 minute

  6. 6

    Add squid and prawns stir in with mix till just cooked.

  7. 7

    Add rice noodles and stir till the noodles fully coated with mix

  8. 8

    Add soy sauce, sesame oil and Chinese cooking wine and stir for 1-2 minutes.

  9. 9

    Add green part of spring onion and bean sprouts stir for 1- 2 minutes​. And you're​ done.
