Ingredients

20 min
2-3 servings
  • packageramen WITHOUT seasoning packet
  • 1/3 lbpork belly, chicken, beef, or tofu
  • 1/4of a yellow onion, sliced
  • 1/2carrot, julienned
  • 1/4bell pepper, julienned
  • 2dried shiitake mushrooms OR 2 sliced fresh mushrooms
  • 1 cupbok choy, 2-3 inch pieces
  • 3 tbswhite or red miso paste (I use a mix of white and red)
  • 1 tbsmirin
  • 1 tbssesame oil
  • 1 tspgochujang(optional)
  • 1 tspThai chili paste
  • 1 tspblack pepper
  • to tastesoy sauce

    Set protein aside to marinate in mirin and pepper

  2. 2

    If using, soak dried shiitake mushrooms in cold water until soft.

  3. 3

    In a large bowl, mix together your marinated protein and leftover marinade, veggies (except bok choy), miso paste, sesame oil, Thai chili paste, pepper, and gochujang.

  4. 4

    Transfer mixture to a medium pot and saute for about 3 minutes.

  5. 5

    Add 2 1/2 cups of water and bring to a light boil for about 15 minutes or until desired richness.

  6. 6

    Add noodle pack and bok choy. Cook until noodles are done and finish with an egg, scallions, and a drizzle of sesame oil and soy sauce if desired.
