  1. 4 cupsYam
  2. 1cksp Veg Oil
  3. 1onions diced
  4. 3fresh tomatoes finely chopped
  5. 2fresh pepper finely chopped
  6. 4eggs (beaten)
  7. to tastesalt
  8. Bouillon cube (optional)

  1. 1

    Peel Yam, Rinse and boil in a pot of water with salt and a little sugar if you so desire. Drain water once its ready.

  2. 2

    Heat veg oil in a frying pan.

  3. 3

    Add onions and saute, then add tomatoes and pepper, stir continuously, then add pinch of salt to taste

  4. 4

    Pour eggs into the sauce and stir once the egg sauce is cooked through; turn off heat

  5. 5

    Serve Yam with Egg Sauce.
