Trust me am not a Yam Fan, I just had to publish this plate of goodness.... the egg sauce was just too chewy for some weird reason. I did enjoy the plate.
Boiled Yam & Egg Sauce
Trust me am not a Yam Fan, I just had to publish this plate of goodness.... the egg sauce was just too chewy for some weird reason. I did enjoy the plate.
Steps

Peel Yam, Rinse and boil in a pot of water with salt and a little sugar if you so desire. Drain water once its ready.

Heat veg oil in a frying pan.
- 3
Add onions and saute, then add tomatoes and pepper, stir continuously, then add pinch of salt to taste
- 4
Pour eggs into the sauce and stir once the egg sauce is cooked through; turn off heat
- 5
Serve Yam with Egg Sauce.
