Smoked Ginger Chicken Kofta (Light)

Wash the chicken breasts thoroughly. Season them with all the listed ingredients and let marinate for 2 to 3 hours.

Place the marinated chicken and all the marinade into a food processor and blend until very finely ground.

Brush a sheet of plastic wrap with olive oil. Place some of the ground chicken mixture on it, roll it up tightly into a log, and seal the ends. Repeat with the remaining mixture until all is used.

Refrigerate the chicken rolls for 1 hour to firm up, then bake in the oven, keeping an eye on them as they cook.

For each roll, place a small piece of hot charcoal on a piece of foil, add a drop of oil, and let it smoke the kofta briefly for a smoky flavor. Remove the charcoal, garnish as desired, and serve.
