'Boiled Arrowroots'

Arrowroots are tubers commonly known as 'nduma' in most Kenyan places. they are very nutritious and contain a lot of starch. The boiled arrowroots can be served with beef stew or vegetables for a quickly lunch or dinner.

Place the arrowroots in a sufuria and add water and then salt.

Place the sufuria over a medium heat making sure that the arrowroots do not stick to the bottom of the sufuria.

Cook for about 20 minutes. When the arrowroots have softened, remove the lid and puncture the arrowroots with a sharp knife to check if the arrowroots have completely softened.

If it is tender, drain the water and allow the arrowroots to cool.
