Make the dough by first, seive the flour, add the yeast directly into it and the sugar and cinnamon.

In a separate bowl whisk the egg into the milk

Make a well at the centre of the flour and add the milk and egg mixture and slowly mix to form a dough.

Knead the dough for 4 -5 minutes or until it stops sticking to the sides of the bowl and you a smooth surface

Then cover the dough with a dump cloth and allow to rest for 15 minutes. then place the dough on a floured surface.

Roll the dough on a lightly floured surface into 1 cm thick piece. And using a sharp knife cut the dough into your preferred size setting ready for deep frying.

Pour oil in a frying pan and put over medium heat. then after sitting for about 30 minutes, test the temperature of the oil by placing the back of a wooden spoon into the centre of your frying pan. if the oil is hot enough to use, bubbles will immediately come up from where the tip touches the bottom pan.

Gently dip the mandazi pieces to cook until light brown on the first side then turn to cook on the second side.

Serve your mandazis either warm or cold.
