Cheesy chicken burgers

Back with another incredible recipe that your children and anyone else in your life would LOVE! Everything you love about chicken fajitas, in burger form! Cheesy chicken burgers are topped with sautéed chicken, peppers and onions and a big dollop of coleslaw.
Instead serving up the chicken fajitas on a sizzling hot platter we’re going burger-style because burgers are a summer thing.
As much as you would love the sweet peppers piled on the burger with of melty cheese, it’s the tender, juicy chicken strips that are really the star of the show. Boneless, skinless chicken breasts cut into strips are an ingredient that usually needs a little help to reach their full potential. With the right preparation, they can go from plain-jane to something memorable as is the case in these burgers.
Marinate the chicken with salt, pepper powder, vinegar, chilli pepper, garlic and oil and leave to rest for 10-15 minutes. The marinade has a vinegar which will break down the fibers in the chicken. This gives you a very tender chicken once it’s cooked.
it’s time to make the burgers. Cook chicken till tender and liquid dries up. Add the veggies and cook till soft but still has bite. For a little flavour I added hot sauce and soy sauce. You can use barbeque sauce instead. Add cheese and melt it away.
Now its assembly time! Lettuce, chicken filling, coleslaw and voila!

In a bowl add the chicken, vinegar, salt, pepper, chilli powder and garlic.

Mix well and rest 15 minutes.

In a bowl add the cabbage, carrots, mayonnaise, mustard, salt and pepper. Mix well and chill.

Heat a pan and cook the chicken till tender and liquid has dried. Stir fry till golden.

Add the vegetable and cook till soft but has a crunch.

Add the sauces and cook 1 minute.

Add the cheese and cook till cheese melts.

Assemble the burger: place lettuce leaf on bottom bun, top with chicken filling and dollop of coleslaw. Close the burger and secure with a pick.
