To make Puri..
Add Wheat flour and semolina in the bowl
Add oil and salt,mix well.
Add water little at a time and knead the soft dough and give it rest for 10 minutes - 2
After resting, knead again and make an equal amount of portions for Puri.
Roll it all then heat the oil and fry all the Puris till puffed,
Remove in the bowl.
Puris are done. - 3
Now make a shaak..
Peel wash and cut the potatoes and Brinjals in big size.
Leave them in the water.
Crush the Tomato onion, Fresh coriander and chilli garlic ginger.
Keep everything ready. - 4
In a pan add oil together with mustard cumin seeds and Asafoetida. Let them splutter.
Then add crushed chilli garlic ginger and onion.saute well.
Now add tomato and salt.
Cook till the tomato gets mushy. - 5
Now add chilli coriander and turmeric powder with little water and cover the pan to cook spices.
After that add potato and Brinjal halves,add water,mix and cover till shaak gets cooked.
Lastly add fresh coriander
Mix slowly so Potato doesn't break. - 6
Monsoon special poori and Shaak are ready.
Transfer in the bowl,
Sprinkle coriander.
Prepare the lunch dish with a bowlful of shaak,poori and fried moga (cassava) papad.
