California Farm Tea Smoked Shallots and Chicken Liver Snack

In the air fryer oven. Safe, quick and convenient. For the smoke, I used loose tea and hardwood pellets in a metal cup on lower rack of my air fryer oven.
Shallots are a tea smoked delicacy, taste great warm or cold. Mild when smoked whole, pungent when smoked in slices.
I smoke the shallots whole, then slice and microwave a minute to bring out the sweetness. I smoke them with the whole chicken livers on the same tray on upper rack.
Pair with pickled green mangos in pepper oil. Make great weekend snacks.

Ingredients

25 minutes
2 people
  • 3whole chicken livers, frozen, sprinkled with flaked seasalt
  • 1 Tspflaked seasalt
  • 2whole shallots
  • 1 Tbshardwood smoke pellets
  • 1 Tbsbutter
  • 1 Tbstea leaves, I prefer Lapsang Souchong
  • Serve with pepper oil pickled mango on the side

  • Equipment: air fryer oven, metal cup, match, toothpick
  • Cost: 25 cents per dish

Steps

  1. 1

    Turn oven to broil, 450F degrees. Place metal cup with tablespoon of hardwood chips on lower rack, butter on top. When butter has melted, light with match. When smoking starts, blow out the flame, sprinkle tablespoon of tea on top. My Tea Smoke started under 10 minutes.

    Rub chicken livers with flaked seasalt. Peel shallots, leave whole. Place both in upper oven on grilling rack to impart tea smoke flavor. Poke with fork for tenderness and check for smoke color. Done in 18 minutes in this air fryer oven. Take shallots, slice, microwave shallot slices one minute to bring out the sweetness.

    Arrange chicken livers in center, garnish with tea smoked shallots and oil peppered green mangos. Serve with toothpick. Enjoy.
