Ingredients

2 hour smoke, 18 minute finish.
12 wings. Six people
  1. 3 poundschicken wings, 12 wings
  2. 12 Tsppickled green mango in pepper oil
    California Farm Green Mangos Pickled in Pepper Oil
  3. 3 Tspseasalt
  4. 3 Tspgranulated garlic
  5. 3 Tspwhite pepper
  6. 3 Tbsolive oil
  7. Halfcup hardwood chips
  8. Halfcup loose tea
  9. 1 Tbsunsalted butter

Steps

2 hour smoke, 18 minute finish.
  1. 1

    Soak 12 wings in salted water, drain on kitchen towel, shake in plastic bag with granulated garlic, pepper and olive oil

    Light half a metal cup with hard wood chips and Tbs butter under broiler, ten minutes. Place wings on oven rack, 250 F degrees. When flaming, blow out flame, sprinkle half a cup of loose tea on top, place in airfryer oven under the wings, smoke till you like the tea color, about two hours.

    When you like the color, turn heat up to 450F degrees, bake the fat out, 18 minutes. Serve with spicy pickled green mango in pepper oil, it is a treat.
