Githeri is one of the main Kenyan dish which has Kikuyu origin. Its a mixture of maize and beans. Enjoy my nutritious dish.
Steps

Place your sufuria over moderate heat and add oil then let it heat a little bit and then add onions. Let the onions saute until golden brown then add tomatoes and cover for a few minutes to soften and stir.

Once the tomatoes have soften, add the boiled maize and beans and stir to mix. cover for 2 minutes and add the chopped carrots and stir to mix, then cover for 3 minutes to simmer.

Once its mixed well, add coriander, royco and salt and stir to mix well again then cover for a few minutes. Remove from heat and Serve
