Grate coconut in a mixer with 2-3 tbsp water. Blitz twice to get a coarse texture. Optionally use a grater.Depending on the moisture content of the coconut, you may have to vary your use of dry binding ingredients like rice flour, wheat flour and gram flour. Check that the fritters bind well before frying.In a mixing bowl add all the ingredients and combine them together using your hands.

Divide the mixture into 12 equal portions. Slightly flatten the balls so that they fry and brown evenly. Heat oil in a pan and fry the coconut fritters of narkoler bora/ vada on medium to low heat until both sides develop a rich brown and crispy crust.

When frying the fritters, do not turn them often.When one side develops a crispy brown crust, flip and fry similarly the other side.Garnish with chopped coriander and serve hot with tea or as a side with dal and rice.
