Ingredients

30-35 minutes
3/4 servings
  1. 1/2 cupsattu/roasted kala chana (skin peeled)
  2. 1/2 cupwheat flour (sifted)
  3. 1/3 cupghee (5 tablespoons plus 1 teaspoon)
  4. 2 tbspalmonds and pistachio finely chopped
  5. 1 tbspgolden raisins
  6. 1/2 tspcardamom powder
  7. 1/2 cupjaggery powder
  8. As neededfew cashews for garnishing

    To make sattu powder at home:-
    Check the quality and expiry date while buying roasted Chana. Stale or expired Chana can leave a bitter taste. So ensure the best quality.

    Take roasted black Chana and peel its skin. Then take ½ cup peeled black Chana in Mixer Grinder.

    Then grind the black Chana into a fine powder in a mixer jar. Keep aside.

    Heat ¼ cup (4 tbsp) ghee in a pan and roast wheat flour on low flame until fragrant and golden brown.

    Next add 1 tbsp ghee and sattu powder. Add 1 teaspoon ghee more if mixture looks dry.

    Continue roasting on low flame until the sattu becomes fragrant and the ghee releases from the sides.

    Add golden raisins, chopped almonds and pistachios. Mix well and cook for 5-7 minutes, stirring occasionally. Then turn off the gas.

    Allow the mixture to cool slightly warm (lukewarm), then add ½ cup jaggery powder, ½ tsp cardamom powder and mix well.

    Note:- If the mixture is hot, the jaggery will melt and the mixture will become watery. So add Jaggery when mixture is warm enough to handle.

    Break up any lumps and make sure the mixture is well combined. The mixture should have the right crunchy consistency. This helps in mixing and shaping the Ladoo easily.

    Take a small amount of the mixture. Make lemon shaped round ladoo. If the mixture seems too dry, add melted ghee as needed. Similarly prepare all Ladoo. Garnish with cashews.

    Serve and enjoy the delicious Sattu ladoo.
    Keep this ladoo in an airtight container.
