Rice Noodles Made from Rice Paper

Make a broth by simmering carrots, green onion bulbs, cilantro stems, lean pork, and shrimp in water.

To make the noodles, stack 4 rice paper sheets: place 1 dry sheet on the bottom, 2 moistened sheets in the middle, and 1 more on top. Brush both sides with oil so they don't stick together, then cut into noodle-like strips using scissors or a knife.

Place bean sprouts or shredded water spinach at the bottom of a bowl, add the rice paper noodles on top, and ladle the hot broth over. For softer noodles, briefly dip them in hot water twice before serving.

Top with black pepper, green onions, and cilantro.
