Spinach & Feta Stuffed Chicken

Ingredients

  1. Fresh Baby Spinach
  2. Fresh crumbled Feta Cheese
  3. Fresh mozzarella cheese
  4. 2-4Bone/skinless chicken Breasts (breasts need to be thick)
  5. Chopped tomatoes with no juice
  6. Olive oil
  7. Garlic salt
  8. Italian seasoning
  9. Salt
  10. Pepper

Cooking Instructions

    Carefully wash & hand dry with paper towels all of the baby spinach.

    Cut off all the stems from all of the baby spinach.

  3. 3

    Put into a medium-sized bowl, the following: Cut up the mozzarella cheese into small chunks, then add some of your feta cheese to the bowl for a 1:1 ratio.

    Add the following to the bowl: baby spinach, cheeses, oil, garlic salt, & italian seasonings & mix everything carefully, but well.

    Add the tomatoes to the bowel & mix everything evenly & carefully.

    Take each chicken breast clean them well & butterfly each piece of chicken.

  7. 7

    Take a piece of parchment & fold it. Now place each piece of butterfly chicken 1 by 1 between the parchment paper & softly use a mallet & thin out the chicken.

    Salt & pepper all pieces of the chicken.

    Take the mixture in the bowl & stuff on one side of the chicken side of the butterfly. Stuff it well, but not over stuff it. You need to take the top half of the butterfly & close it & tack it close with tooth picks.
