  • 2 CupFine Semolina
  • 1/2 curad flour
  • 1 crice flour
  • 1/2 cbesan
  • 1 cmasa harina (Mexican corn flour)
  • 1 CupLauki Grated(Bottle gourd)
  • 1 cupcucumber, grated
  • 1 ckale, finely chopped
  • 1 conion, finely chopped
  • 1 cupMedium sour thick curd
  • 2Green Chili, chopped
  • 2 tspGinger garlic paste
  • 1 cpotatoes, grated
  • As neededwater
  • salt to taste
  • 1 cupGreen Coriander leaves Finely chopped
  • 1 tbspbaking powder
  • 1/2 tspbaking soda
  • For Tadka
  • 2-3 tbspoil
  • 1 tspMustard seed
  • 1/2 tspCumin seed
  • 2dried red chilies
  • 1/2 tspasafetida
  • 5-6Curry leaves
  • 2 tspSesame seeds

    Prepare a checklist keep all ingredients within reach

    Whisk together all flours, and ginger, garlic, green chilies together in a big bowl. Add curd whisk. Add the grated gourd, cucumber, kale, onion, shredded potato and coriander leaves. Add enough water to get the right consistency. The batter should not be watery or lumpy. Add baking soda and salt to taste, stir and rest for 30 minutes.

    Thadka Heat 2tbsp oil. In a saucepan/kadai over medium heat. Stir in mustard seeds let them burst opes, Stir in asafetida, curry leaves, sesame seeds and red chilies-saute for 2 minutes. Transfer this to the batter mix. Salt to taste.

    Place a kadai over medium heat. Use a shallow kadai or a non-stick pan.. Grease the kadai with a tbsp oil. Pour 2 cup batter and spread with a spoon to make a circle. Sprinkle 1 tablespoon of oil evenly over the top and cover. After a couple of minutes,
    you can smell the aroma of cooked pancake. Flip and cover. cook for 3 minutes,
    It may take 5-6 minutes to make a nashta/pancake. Cooking time depends on the stove and the size of the Nashta. You can make approximately 10 pancakes.

    Transfer the nashta to a serving plate. It is soft and spongy. Flavorful, aromatic, nutritious pancakes are ready for your eating pleasure. Serve with chutney, pickles. I served with dahi chutney and ridge gourd tamarind chutney..
