Bring a pot of water to a boil. Cook the dumplings as you normally would. Once cooked, remove the dumplings and set aside.
While the dumplings are cooking, separate the salted egg yolks and whites. Use a spoon to finely mash both the yolks and whites until very small pieces form (this helps them foam up faster).

Heat a wok or large skillet and add 1 tablespoon of oil—slightly more than you would use for regular stir-frying. (It's a bit more oil than usual, but it's fine for an occasional treat!)
Heat the oil over high heat and swirl it around the pan to coat evenly.
Reduce to low heat. Add the mashed egg yolks and stir in circles, letting them foam up. Keep stirring until the yolks are melted and bubbly. - 3
Add the minced garlic and mashed egg whites to the pan, stirring in circles to mix well.
Add the cooked dumplings, making sure each dumpling is coated with the egg foam. Gently toss to avoid breaking the dumpling wrappers. - 4
Once all the dumplings are evenly coated with the egg foam, reduce to low heat.
Sprinkle with a pinch of salt (don't skip the salt—even though salted eggs are salty, the saltiness can be lost during cooking).
Drizzle with a little sesame oil.
Give everything a quick toss, then remove from heat.Always use low heat when stir-frying the dumplings, as high heat can burn the salted egg foam, turning it brown and bitter instead of golden and fragrant.
You can top the finished dish with black sesame seeds, bonito flakes, chopped green onions, or shredded ginger for extra flavor—they all taste great!
For a vegetarian version, simply omit the garlic for a delicious egg-based dumpling dish.
